Chef Adam Hall and Jay Bayer bore Saison of a shared joy for food, drink, travel, conviviality, and a touch of nerdiness. We were both born and raised in the countryside of Virginia, Jay on a small farm in Augusta County and Adam in rural Western Albemarle. Our friendship and the early Saison conversations began over home-brewing sessions and Sunday dinners with friends. Our Southern roots and travels through Central America led us to see the culinary connections between the Southern US and Central American foodways, that cultural diffusion between the Old and New World gave rise to the Southern food package. In defining our iteration of New Southern Food, we looked back to classic technique for execution and traveled to small markets and towns for authenticity and inspiration. We want Saison to be that crossroads of present and past, classic and modern, nerdy and cool. We aim to deliver amazing food and drinks in an atmosphere that is comfortable and inviting with service that is attentive and classic, yet relaxed and casual.
